BIOGRAPHY
Fay Kazzi received her undergraduate degree in nutrition and dietetics from Notre Dame University in Lebanon, then her graduate degree from Loma Linda University. Dr. Kazzi immediately worked as a clinical dietitian at Riverside County Regional Medical Center, while concurrently working for Pacific Grove Hospital as an on-call dietitian.
After gaining experience, Fay worked for Alvord Unified School District in the department of Child Nutrition Services, coordinating the Nutrition Education Obesity grant, and as an adjunct professor for California Baptist University in Health Sciences. At this time, she began her PhD in rehabilitation sciences at LLU.
Fay served the Head Start Program and instructed nutrition and plant-based culinary classes for Loma Linda University School of Medicine while completing her doctoral degree in 2018. Fay’s dissertation, titled the “Effect of Bacillus Coagulans and Galactomannans on the Quality of Life of Patients Undergoing Laparoscopic Sleeve Gastrectomy” was published in the Hellenic Journal of Surgery and Alternative Therapies in Health and Medicine.
As a food photographer and a plant-based recipe creator at TheEarthyCanvas.com, Fay’s clients include Clark’s Nutrition and Health Food Market, Mother’s Market and Thrive Magazine. Fay operates FK Nutrition Consulting Inc, a nutrition consulting private practice, and serves as a consultant for the Perris Farm to School Initiative.
It is Written Ministries “Take Charge of Your Health” Television series featured Fay’s presentation: “Seven Segments on Health, Nutrition, Diet, Wholeness, and Disease Management.” Fay released her first book in April 2020, entitled The Earthy Canvas Vegan Cookbook, and sold over 1,000 copies in a few months.
